Mint Chocolate Chip Cookies Exist?!

If you're a sucker for mint chocolate chip ice cream like I am, I think these delectable mint chocolate chip cookies are perfect for you. These traditional chocolate chip cookies with a hint of mint are honestly irresistible! I've only made them twice, but both times they have been absolutely delicious!




Mint Chocolate Chip Cookie Recipe:

  • 2 cups of Whole Wheat Flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 sticks of butter
  • 3/4 cup sugar
  • 3/4 cup packed brown sugar
  • 1 teaspoon Mint Extract
  • 2 large eggs
  • 6 to 8 drops green food color
  • 1 1/2 cup dark chocolate chunks
Also feel free to add ¼ cup of grinded up Oats and 2 tablespoons of grinded flax seeds for a healthy touch! It is also possible to substitute butter with 2 cups of applesauce. The applesauce should make the cookies a bit more soft and chewy.

1. Preheat oven to 375° F.
2. Lightly grease cookie sheets with butter.
3. Combine flour, baking soda, salt, and possible oats and flax seeds in a small bowl. Stir together.
4. Cream the butter, granulated sugar, brown sugar and mint extract with an electric mixer until creamy.
5. Add the eggs one at a time. Be sure to beat thoroughly after each egg.
6. Gradually beat in flour mixture.
7. Add green food coloring
8. Stir in chocolate chunks.
9. Using a tablespoon, drop dough onto baking sheets.
10. Bake for 9 to 11 minutes or until lightly golden then cool on wire racks.

Dedication to My Pup (And Hopefully My Future Cat)

I spend a good amount of my time laying around with my lovely pup, Sophie. She is a large, hazel eyed Spinone Italiano and I love her to death. She's just like a sister to me.




Though I adore my pup, I've always dreamed of having my very own cat. As an ode to my future cat, I wrote this simple poem:

My Very Own Cat

All I’ve ever wanted
Was my very own cat.

When I have a rough day at school,
She’ll welcome me at the doormat.
And as I wind down to relax,
She’ll snuggle on my lap.

When I’m feeling silly,
She’ll do things I’ll laugh at
And she’ll be cute as a button
Even when she’s a brat.

When I’m lonely and need to chat
She’ll be there to talk
And if I need to exercise,
She’ll join me for a walk.

When my boyfriend comes over
And gets distracted by Mortal Combat
She’ll keep me company
And her head I will pat.

When I get a scratch,
She’ll lick it and make me better
And if she gets chilly,
I’ll dress her in warm hats and sweaters.

I’ll love her whether she’s skinny, furry, or fat
Orange, white, or black as a bat
Tiny as a gnat
Or even if she’s hairless like a naked mole rat!

Caught Up In the Festivities of Valentine's Day

In the spirit of this week's Valentine's Day festivities, my daily journal entries seemed to reflect on the concept of love. What is love? What does love feel like? How do you tell someone that you truly love them?

Is love all about putting selfish desires behind for the well-being of someone else? Is it possible to love my best friend, my favorite stuffed animal penguin, my mother, and my boyfriend all at the same time? As Aristotle once stated, "Love is composed of a single soul inhabiting two bodies." With these rhetorical questions dizzying by mind, I decided to reflect on my own experiences for an answer.

To me:
Love tastes like warm cinnamon oatmeal on a winter morning.
Love looks like the sun setting over a field of flowers on a warm spring evening.
Love sounds like the purr of a kitten.
Love smells like my favorite treat baking in the oven.

My Boyfriend and I

Upon reflection on the concept of love, I created this short poem:

Yellow to Red
I sense a love that could become
A yellow flower turning red.

Reflect on evening kisses soft.
Observe the sunset ever warm
So soothing yet unlike before.

I wonder while you drive me home,
Why aren’t you more familiar, dear?
